Getting tired of repeating your standard veggie recipes? Join us and Jazz Up Your Veggies with some new recipes, tips and tricks!

*This is a cooking demonstration. A list of ingredients and supplies is provided below if you would like to "cook along" during the class, however it is not required. Employees must participate via online webcast.*

You Will Make:

  • Bibb and Bean Burrito Bowl
    12 Bibb of Boston lettuce leaves
    1-1/2 cups canned beans, such as black, pinto, and/or kidney beans (drained and rinsed)
    2 Cups Grape Tomatoes (quartered lengthwise)
    1-1/4 cups corn (frozen, thawed or canned)
    3 green onions (green and white parts, very thinly sliced on the diagonal)
    1/3 cup Monterey Jack cheese (shredded)
    1/4   cup cilantro (chopped fresh)
    1/4 teaspoon cumin, or to taste
    1/4 teaspoon chili powder, or to taste
    1 Hass avocado (peeled, pitted, and diced)
    2/3 cup medium or hot tomatillo salsa (salsa verde)
    1/4 teaspoon sea salt (optional)
    4 lime wedges
  • Lemon Raspberry Chia Seed Pudding
    1/4 cup chia seeds
    1 cup vanilla almond milk
    1/2 teas lemon zest
    1 1/2 teas lemon juice
    1 tablespoon honey
    2 cups raspberries
  • Walnut Lentil Salad
    6 cups water
    2 cups lentils (any color)
    1 large lemon (zest and juice)
    1 clove garlic (minced or grated)
    1 tablespoon honey
    1/4 cup olive oil
    1 medium orange or yellow bell pepper (seeded and diced)
    1 cup grape tomatoes (halved)
    1/2 cup walnuts (toasted chopped)
    2 cups mesclun or mixed baby field greens

You Will Need:
Small mixing bowl
Wire Whisk
Measuring Spoons
Measuring Cups
Cutting board
Stock Pot
Vegetable knife
Large salad bowl
Fine mesh sleeve (if available)
Serving plates or pasta bowls
4 ounce bowls


Earn 25 points for attending this wellness training class. Eligible employees must complete the entire class to receive credit as well as a 1-hour training certificate issued by Harris County Employee Wellness.
