*This is a cooking demonstration. A list of ingredients and supplies is provided below if you would like to "cook along" during the class, however it is not required. Employees must participate via online Zoom webinar.*

You Will Make:
 

Peanut Butter Banana Oat Bites:

  • 1 egg
  • 1 ripe banana (mashed)
  • 1/2 cup peanut butter or almond butter (heated in microwave for 30 seconds)
  • 1 tsp vanilla extract
  • 2 tbsp Stevia (optional)  
  • 2 cups old-fashioned rolled oats (not quick cooking) (gluten-free if needed)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • ¼ cup ground flax seeds

 

Power Granola:

  • 1 cup unsalted cashews (chopped)
  • 1 cup unsalted raw pumpkin seeds (pepitas)
  • 1 cup unsalted pecans (chopped)
  • 1 cup unsalted sunflower seeds
  • 1 cup old-fashioned rolled oats (not quick cooking)
  • ¼ cup natural peanut butter
  • ¼ cup coconut oil, sunflower oil or other medium-high heat oil (not extra-virgin)
  • ¼ cup stevia

 

Power Lunch Salad:

  • 5 1/2oz organic baby spinach (bag spring mix blend)
  • 2 tbsp sliced almonds
  • ¼ cup pumpkin seeds (pepitas)
  • ½ cup dried cranberries
  • 1 small organic apple (cored and diced)
  • 1/3 cup feta cheese
  • 7 oz oven roasted deli turkey breast (or chicken)
  • 1/3 cup balsamic vinegar
  • 1 ½ tbsp. olive oil

YOU WILL NEED:

measuring cups
measuring spoons
knife
microwave

bowls
